GARANG ASEM AYAM

Garang Asem
Bahan :
1 ekor ayam (potong 12)
1 jeruk nipis
3 pasang Ati Ampela rebus, potong2 (optional)
400 ml santan cair
100 ml santan kental
10 cabe Rawit (sesuai selera)
3 daun Salam
5 daun jeruk buang tulangnya sobek kasar
2 batang serai geprek
3 cm lengkuas geprek
1 sdt kaldu Jamur
Garam secukupnya
Gula secukupnya
Bumbu Iris :
12 Bawang merah
7 Bawang putih
3 Cabe Hijau
5 Cabe Merah
5 Tomat Hijau ( pengganti belimbing wuluh)
Cara Membuat :
1. Cuci bersih Ayam, tusuk-tusuk dg garpu, kucuri ayam dg jeruk nipis dan garam remas2 agar meresap, diamkan selama 15 menit
2. Tumis bumbu iris, bawang merah, bawang putih sampai harum, masukan lengkuas, serai, daun salam, daun jeruk
3. Masukan Ayam aduk sebentar, masukan santan cair, tambahkan cabe hijau, cabe merah dan cabe Rawit. Masak sampai mendidih. Tuangkan santan kental timbah-timbah agar santan tidak pecah.
4. Masukan tomat Hijau, tambahkan kaldu Jamur, garam dan gula, aduk-aduk agar merata. Biarkan sampai kuah agak menyusut dan bumbu meresap, koreksi rasa
