PEPES IKAN KEMBUNG

Bahan:

  • 500 gram ikan kembung (bebas ikan apa saja), bersihkan kotorannya, cuci bersih
  • 6 buah belimbing wuluh, potong bulat 1 cm
  • 1 buat tomat merah besar, potong kasar
  • 3 buah tomat hijau, potong kasar
  • 10 buah cabe rawit merah utuh
  • 2 lembar daun salam
  • 6 lembar daun jeruk
  • 2 batang serai, keprak
  • 2 cm lengkuas, keprak
  • 1 ikat kemangi, petiki daunnya
  • Garam & gula merah secukupnya

Bumbu Halus:

  • 12 butir bawang merah
  • 6 siung bawang putih
  • 4 buah cabe merah besar
  • 15 buah cabe rawit (sesuai selera)
  • 5 butir kemiri sangrai
  • 2 cm kunyit, bakar

Pelengkap:

  • Daun pisang & tusuk gigi untuk menyemat

Cara Membuat:

  1. Tumis bumbu halus sampai wangi, tambahkan daun salam, daun jeruk, serai & lengkuas, aduk rata, masukkan ikan, bumbui garam & gula, masak sampai ikan matang, tes rasa, bila sdh pas matikan api.
  2. Tambahkan irisan belimbing wuluh, tomat merah, tomat hijau & cabe rawit utuh, aduk rata.
  3. Siapkan daun, bungkus ikan dg daun pisang, beri kemangi, bungkus & semat lidi.
  4. Menjelang disajikan bakar pepes ikan diatas bara api/teflon, angkat & sajikan segera.
