ABON IKAN (SAMBAL LINGKUNG)

BAHAN :

  • 1 kg fillet ikan tenggiri/kakap/ekor kuning
  • 900 ml santan kental dari 2 buah kelapa
  • 20 lembar daun jeruk
  • 6 lembar daun salam
  • 4 batang sereh uk besar, klo kecil 6 atau 7 dimemarkan
  • Garam & gula secukupnya

BUMBU HALUS :

  • 75 grm cabe merah keriting
  • 75 grm bawang merah
  • 75 grm bawang putih
  • 10 butir kemiri
  • 2 ruas lengkuas muda
  • 2 ruas kunyit tua
  • 2 sdm munjung ketumbar

CARA MEMBUATNYA :

  1. Kukus ikan hingga matang, lalu giling halus, siapkan wajan masukan bumbu halus berikut daun jeruk, daun salam & sereh!
  2. Kemudian tuang santan kental, garam & gula, hati2 penggunaan garamnya krn ketika sambal lingkung kering maka rasa asin akan lebih terasa, aduk hingga rata!
  3. Kemudian masukan ikan giling, masak hingga kering sambil terus diaduk & warnanya menjadi coklat, dinginkan!
  4. Simpan ditempat kering.
