Rawon Iga Sapi

Bahan :
–  500 gr iga sapi
–  1 ltr air
–  3 ruas lengkuas, memarkan
–  4 lembar daun salam
–  5 lembar daun jeruk
–  3 batang serai, memarkan
–  2 sdm gula merah
–  2 sdt gula pasir
–  2 sdt garam
–  1 sdt kaldu bubuk
–  2 batang daun bawang, rajang
–  3 sdm minyak untuk menumis

Bumbu Halus :
–  6 siung bawang merah
–  4 siung bawang putih
–  1 sdt merica butiran
–  1 1/2 sdt ketumbar, sangrai
–  2 ruas kunyit
–  1 ruas kencur
–  2 ruas jahe
–  5 buah kluwak

Pelengkap :
–  50 gr tauge pendek
–  sambal –  telur asin, belah jadi 2

Cara Membuat :
⏩Panaskan minyak, tumis bumbu halus sampai harum, tambahkan semua bahan kecuali iga sapi dan air, aduk sebentar, masukkan iga sapi, aduk-aduk sampai daging iga berubah warna.
⏩Pindahkan campuran daging iga dan bumbu ke panci, tambahkan air, masak rawon sampai daging iga sapi empuk, dan kuah agak menyusut, cicipi rasa, angkat.
⏩Sajikan rawon iga sapi selagi panas dengan bahan pelengkap.
